The Love Story of Garlic

Garlic is a crop of patience, care, and quiet devotion

In the cool days of fall, each clove is carefully tucked into the soil, where it rests through the long winter. When spring arrives, green shoots push through, reaching for the sun while the bulb quietly forms below.

By early summer, the plants send up elegant green spirals called scapes. These are carefully snipped away — not only a delicious seasonal treat, but also a way to help the plant focus its energy on forming flavorful bulbs underground.

Come mid-summer, the leaves begin to yellow, telling us the bulbs are ready. Harvest is just the beginning: each garlic bulb is gently pulled, cleaned and then cured for weeks in a dry, airy space. This slow process allows the skins to dry and tighten, sealing in the garlic’s flavor and improving storage quality
